
Sending another batch to some very important people, and this time I tried a different technique for the Linzers.
Linzers are sandwich cookies, but the main problem with them is that they are very finnicky when it comes to rolling them out and cutting them. If they’re too warm they will be a nightmare to cut, but if they’re too cold you won’t be able to roll them. The recipe I’ve used mentions to flour a surface before rolling out the dough, but I decided to just roll it out between two pieces of parchment paper, and that turned out to be the best improvisation I could have done.

Letting the dough warm up for a bit helps a lot, and it’s less mess as well. No flour or dirty surface. Now I let the dough chill for a bit so it’s easier to cut.

Fan fuckin’ tastic. I really hope they like them because now I’m super comfortable making these.
