Meatloaf

Jist your basic no frills meatloaf. Making this thing has been very educational for me because I have been able to break out multiple Tuesdays that I don’t get to use often. I was able to use a food processor to grate some onions and carrots to add a lot of size to the thing. Basically it was filled good mushrooms, onions, carrots, and garlic. The meat was a combination of lean beef and lean pork and it helped immensely by not allowing it to leak so much fucking juice everywhere. The glaze was pretty tasty as well, with a combination of sugar-free ketchup, worcestershire sauce, sriracha, and brown sugar (the swerve kind.) What I especially like about making this is that I’m able to store it and then have some leftovers which taste part would be better the second and third time through. I guess you could call this a kind of meal prep but I hate having to wash dishes so good hang on I was able to break out the dishwasher as well.
