
I’m honestly surprised that I was able to make do with a box of cake mix that has been about six months past its expiration date. It still came out fine when I mixed all the shit together with my stand mixer, and I added some chocolate chips I had laying around just so I could get rid of them. I think the beauty of the bundt cake is that when you bake it properly, you get this soft inside but this fucking amazing crunchy exterior that helps with the contrasting textures and it is just nice to eat. With everything said, however, I don’t think I was able to eat everything so I was able to eat a generous third of the cake and decided to put the rest in the fridge, so I’m curious to see how the crispyness of the exterior and the moistness of the interior will fare after being in the fridge for an extended period of time. Still surprised that cake mix still worked after all this time.
