
Got some skinless pieces of salmon and tried frying them with some oil, it didn’t really come out the way I wanted it, but I chalked it up to the kind of pan I was using, because for some reason it isn’t fully flat in the center. I should have stuck with the trusty cast iron, but it was still nice to eat. Anywho, fry that shit for a bit until the surface gets crispy, then I reduced some of that sauce in a bottle, but I also made the mistake of reducing it in the same pan with the fish still in it, so the crispy surface starts to get less crispy due to the liquid that is soaking it up. It’s still good and I’m definitely gonna make it again, because what the fuck else am I gonna use that sauce for, might as well use it all while I can, because waste fucking sucks. I’ll try a different pan and reducing the sauce on something else, because having a crispy piece of fish with a sauce is just the dream for me.
